This cut is the leg of lamb fillet end is the premium end of the leg. This joint had part of the marrow filled thigh bone which helps intensify the flavour of the meat with lots of rich goodness, along with the great balance of internal marbling which with a slow cook enhances the juicy lamb flavours.

The most tender part of the lamb. The rack comes from the ribs of the lamb and can be cooked individually or as a whole. We serve French trimmed so the plate looks stunning. They are incredibly delicious and tender, cooked well over a grill or barbecue. the impressive sweet taste reflects the quality of the lush pastures where our flocks mature on natural grasses. Best served pink on a hot heat and not for long for the most delicious and beautiful flavours. This cut can be oven cooked, BBQ or pan grilled.
